Why Dough Temperature Matters More Than You Think

You can use the same flour, the same starter, the same recipe, and still get wildly different loaves from one week to the next. If that sounds familiar, dough temperature is probably the culprit. It is one of the most powerful variables in fermentation, and one of the least talked about in home baking circles.

What Dough Temperature Actually Controls

Fermentation is driven by yeast and bacteria. Both are living organisms, and like all living things, they are sensitive to their environment. Temperature is the single biggest lever you have over how fast or slow they work.

When your dough is too warm, fermentation moves quickly. The yeast produces gas fast, the bacteria produce acid fast, and you can easily end up with an overproofed dough before you realize it. The structure breaks down, the crumb turns dense, and the flavor often goes flat or overly sour in an unpleasant way.

When your dough is too cold, fermentation slows to a crawl. Bulk fermentation takes longer than expected, the dough feels tight and stiff, and your schedule goes out the window. This is less disastrous than overproofing, but it still leads to inconsistency across bakes.

The sweet spot for most sourdough bakes sits between 75 and 80 degrees Fahrenheit during bulk fermentation. At that range, your wild yeast and lactic acid bacteria are active and balanced. The dough develops structure, flavor compounds build gradually, and you have a realistic window to catch the dough at its peak.

The Problem with Kitchen Ambients

Most kitchens do not hold a stable temperature. They shift with the seasons, the time of day, whether the oven has been on, and whether a window is open. A kitchen that sits at 72 degrees in the morning might be 68 degrees by evening in winter, or 78 degrees on a summer afternoon.

Those swings are small in everyday life, but they are significant to your dough. A six-degree difference in ambient temperature can change your bulk fermentation time by an hour or more. If you are not accounting for that, you are essentially baking blind.

This is why so many experienced bakers talk about desired dough temperature, or DDT. The idea is that you target a specific dough temperature before fermentation even begins, by adjusting your water temperature based on the ambient conditions. It is a simple calculation, but it requires knowing what your kitchen is actually doing at the time you are baking.

Consistency in sourdough does not come from following a recipe more carefully. It comes from understanding the environment your dough is living in.

Humidity Plays a Supporting Role

Temperature gets most of the attention, but humidity matters too. During bulk fermentation, a very dry environment can cause the surface of your dough to dry out faster than expected, forming a skin that resists expansion and scoring. During cold proofing, low humidity in your refrigerator can affect the outer texture of the dough as well.

Covering your dough with a damp cloth or plastic wrap helps, but if you are proofing in an enclosed space, monitoring actual humidity levels gives you a much clearer picture of what is happening. A relative humidity level between 70 and 80 percent during a room-temperature proof is generally a comfortable range for most sourdough bakers.

Again, the issue is not that you need perfect conditions every time. The issue is that without knowing what your conditions actually are, you cannot make informed decisions when something goes wrong.

Building a More Repeatable Process

The bakers who produce consistent results are not the ones with the best intuition. They are the ones who have removed as many unknown variables as possible. They know their starter's activity at a given temperature. They know how their dough behaves when it is too warm or just right. They have a reference point for every bake, so they can troubleshoot and improve over time.

Getting there does not require a professional kitchen. It requires accurate information about your proofing environment.
